Farm Celeris from Levrikons in the Grasslands Region.
One of the best ways to earn Gil (money) fast in Final Fantasy 7 Rebirth is to farm the material Celeris from Levrikons that appear in the Grasslands Region from Chapter 2: A New Journey onwards. Each piece of Celeris sells for a hefty 500 Gil, allowing you to get a lot of money easily even during the game’s early stages.

Celeris can only be stolen from Levrikons so you will need to equip the Steal materia on at least one party member to farm them. You can buy the materia form vending machines as early as Chapter 2 to start racking up Gil fast.

Other Ways to Earn Money Fast.
Defeat enemies in battle.
You can also try farming enemies found in each explorable region by defeating them in battle to earn money. This is also a good way to learn how to fight different types of monsters or to become more skilled in playing as different characters in the game.
Equip Gil Up Materia.
You can increase the Gil you earn from battle by 100% if you equip the Gil Up materia. You can get this materia at Gold Saucer via the GP exchange for 3000 GP from Chapter 8: All that Glitters onwards.
Lower the difficulty.
To make farming Gil easier, you can try lowering the game’s difficulty which will not affect the amount of money you get after battle. Doing so allows you to take down enemies quicker for accumulating Gil during the main story.

Clear side quests (Odd Jobs).
Completing side quests called Odd Jobs is another good way to farm money in the game. In addition to Gil, you also get experience (EXP), materia, equipment, and relationship points for doing these optional missions.

Sell unwanted items at shops.
