Strategy
Use Turpentine and Firebombs
Phalanx has very low fire resistance and can easily be defeated by throwing Firebombs from afar or enchanting your weapon with fire using Turpentine. This will kill many of the Hoplites surrounding, allowing you to attack the Phalanx itself. Two-hand your weapon and unload on the exposed body of the Phalanx before the Hoplites respawn.
Attack with Flame Toss or Soul Arrow
The Magician and Royalty classes have access to the spells Flame Toss and Soul Arrow respectively which are also very effective against the Hoplites protecting the boss. Before taking on Phalanx, you can buy Fresh Spices from Blacksmith Boldwin to recover HP during the fight.
