Wild Horses
The Wild Horses side quest starts off at the Dueling Peaks Stable. By completing this sidequest on time, Link will obtain a Purple Rupee.
Interact with Rensa, the man idling at the counter by the Dueling Peaks Stable. He will task you to mount a wild horse and requires that you bring it back to him in not more than 2 minutes.
By going to the Stable, Link finds several horses scattered. Sneak behind one by crouch-walking, then press A to mount. Soothe the horse immediately by repeatedly pressing L. While mounted you can steer with the L analog stick. You may double your speed with the A button. Return to the Stable before the time limit expires. By accomplishing this feat, Rensa will reward you with the Purple Rupee.
