Rushroom Rush!
To start the Rushroom Rush side quest, talk to Pirou at the Gerudo Canyon Stable between 8AM and 3AM. He will tell you that he needs 55 rushrooms.
This is a quest that you can gradually accomplish by collecting several rushrooms during your travels. The rushrooms are quite easy to find as they are purple and are often found on cliffs. You can also buy rushrooms at Korok Forest, although there is a limit as to how many you can buy during a certain amount of time. You can always go back to the Korok Forest after a few days or weeks to buy more rushrooms.
Once you got 55 rushrooms, speak to Pirou again he will tell you about a treasure chest found at the back of the stable that contains a Diamond.

Couldn’t you just go to the treasure chest before completing the chest?
Just tried, the chest seems to spawn only once you pay the 55 rushrooms
